Summer Berry Pancakes
These quick and easy summer berry pancake stacks make the most of in-season fruit, which brings flavour and colour to your plate. Roughly chopped stone fruit such as peaches, nectarines or plums would work wonderfully in this recipe too.

1 punnet strawberries
1 punnet blueberries
2 teaspoons icing sugar
2 teaspoons lemon juice
2 x packets Marcel’s Happy Pancakes
Vanilla bean ice cream or whipped cream
Mint to garnish
Hull the strawberries. Put any small ones into a bowl. Cut the rest into quarters or even sixths so that you have a range of different sized pieces. Put these into a bowl along with half the blueberries. Halve the remaining blueberries and add these to the bowl along with the icing sugar and lemon juice. Mix well to combine.
Divide the pancakes evenly between 4 plates. Spread ice cream on the first and second pancakes, sandwiching all three together to form a stack. Spoon the berries onto the top of the pancakes followed by the mint leaves to garnish. Serve immediately.
