Sticky Date Pancakes

Nothing says winter comfort like a Sticky Date Pudding. We’ve taken this classic dessert and transformed it into a modern, mouthwatering masterpiece using our signature pancakes. Warm, rich, and irresistibly delicious - it’s the ultimate winter indulgence.

Ingredients

Serves 2

  • 1 packet of Marcel’s Happy Pancakes

  • 100g pitted dates (roughly chopped)

  • 100ml water

  • 100g brown sugar

  • 80ml cream 

  • 50g butter 

  • ½ tsp vanilla extract

  • Pinch of salt

Method

1. Soften the Dates:
In a small saucepan, combine chopped dates and water. Simmer over medium heat for 3–5 minutes until dates are soft and starting to break down.

2. Make the Sauce:
Add brown sugar, butter, and cream to the pan. Stir continuously over low–medium heat until everything melts and combines (about 2–3 mins). Add vanilla and a pinch of salt. Blend for a smooth finish or leave slightly chunky for texture.

3. Serve:
Spoon generously over warm Marcel’s pancakes. Optional garnish: whipped cream, crushed walnuts (if nut-friendly), or sliced banana.
