Petite Pancake Berry Stack

These petite pancake sandwiches make lovely, bright, summery finger food for your next gathering. They also make delicious lunchbox treats for the kids or the perfect plate for all those up-coming Christmas parties and get-togethers.

Ingredients

Serves: Makes 24

  • 150g mascarpone

  • 1 tablespoon brown sugar

  • 2 punnets blueberries (reserve 6 blueberries and cut into quarters for garnish)

  • 2 punnet strawberries, hulled, sliced, (reserve 2 strawberries to finely chop for garnish)

  • 2 x packets of Marcel’s Petite Happy Pancakes

Method

Put the mascarpone into a bowl along with the brown sugar and mix well. Spread 24 of the petite pancakes with this mixture then top half of them with the sliced strawberries and the other half with the blueberries. Top with the remaining petite pancakes, followed by the chopped blueberries and strawberries for garnish. Sprinkle with icing sugar if desired, then serve.
