Pancake Tacos

These pancake tacos are a fun way to serve our limited-edition Maple Pancakes – where the syrup flavour is baked right in the pancake! Inside the taco is creamy cinnamon and maple spiked ricotta, topped with crispy bacon, all wrapped up in our fluffy pancakes. We hope you love them as much as we do.

Makes 12 tacos

Method

Put the ricotta into a bowl along with cinnamon and maple syrup, then mix until smooth. Cook the bacon until crispy then break up into little pieces. Take a pancake and spoon (or pipe) in some ricotta then bring the edges together and pin with half a toothpick (if you find this too hard them simply spread the pancakes with the ricotta and serve flat). Scatter with some of the bacon bits then arrange on a platter. Repeat with the remaining pancakes. Dust over a little extra cinnamon and serve immediately.
