Mini Pancakes with Lemon Curd & Blueberries
These bite-sized mini pancakes not only look pretty but are also deliciously tasty with a layer of zesty lemon curd, fresh blueberries and a good sprinkling of dark chocolate. They may look fancy, but this effortless plate of finger food will be ready for your guests in a matter of minutes.
Ingredients
Makes 24.
1 x packet Marcel’s Petite Happy Pancakes
1 x jar lemon curd
1 x packet blueberries
1 x block dark chocolate
Method
Arrange the pancakes on a platter then spread each one with the lemon curd. Cut some of the blueberries in half then arrange whole and half blueberries on top of the curd. Take the chocolate and drag a sharp knife across the back of the block to create thin shards. Sprinkle these over the top of the pancakes then serve.
