Marcel's & Barker's Fruity Pancake Stack

There is nothing quite like a collab and we think this one is extra special! We’ve combined Barker’s deliciously fruity Peach, Mango & Passionfruit Compote with creamy mascarpone and generously layered it between our soft, fluffy pancakes then topped it all off with in-season fresh fruit and mint leaves. A quick, easy and satisfyingly impressive breakfast or dessert.

Ingredients

Serves 2

  • ½ cup mascarpone

  • ½ cup Barker’s Peach, Mango & Passionfruit Compote, plus extra to drizzle

  • 1 x packet Marcel’s Happy Pancakes

  • Handful raspberries

  • Handful blueberries

  • Mint leaves to garnish

Method

Put the mascarpone and compote into a small bowl and mix well to combine. Arrange a pancake in the centre of two plates. Top these pancakes with the compote mixture. Repeat this two more times until you have a stack of three pancakes with the compote mixture also on the top layer. Drizzle a little extra compote over the top of the stack then arrange the fruit on top followed by some mint leaves if desired. Serve immediately.
