Maple Cinnamon Roasted Pears on Pancakes

Pears are the perfect fruit to roast with wintry, warming spices and serve atop our Happy Pancakes. We love that this recipe is ridiculously easy yet results in a fantastically tasty breakfast, or even dessert. The lemon pairs so wonderfully with the cinnamon and the liquid around the pears magically form a beautiful syrup, perfect for pouring on top of your pancakes before serving.

Ingredients

Serves 4

  • 4 pears

  • 100g sugar

  • 3 tablespoons maple syrup

  • 25g butter

  • 1 cinnamon stick

  • 3 tablespoons water

  • 1 lemon

  • Mascarpone

  • 2 x packets Marcel’s Happy Pancakes

Method

Pre-heat the oven to 200 on fan bake. Cut the pears in half and remove their cores. Using a melon baller is a great way of doing this if you have one. Put the sugar, maple syrup, butter, cinnamon stick and water into a baking dish. Using a vegetable peeler, peel 2 strips of zest from the lemon and add this to the baking dish along with all of its juice. Put the baking dish into the oven for a minute or so to allow the ingredients to melt together.

Remove from the oven and whisk together. Add the pears to the syrup cut side down then return to the oven and roast for 15 minutes before turning and roasting again for another 15 minutes or until the pears are soft and have taken on a lovely golden hue. Remove from the oven and tip the syrup into a small jug.

Warm the pancakes as per packet instructions and arrange between 4 or 6 plates (depending on whether or not you want 2 or 3 pancakes per plate). Spread mascarpone on the bottom 2 (or 1) pancakes then top with the pears followed by a good drizzle of the syrup then serve.
