Mango & Coconut Pancakes

When it comes to summer vibes, Marcel's has got you covered with our pancakes ready for a delicious light summer topping. We think mango and coconut is the best warm-weather duo!

Ingredients

Serves 2 

  • 1 packet of Marcel’s Happy Pancakes

  • 1 ripe mango, diced

  • 150g vanilla coconut yoghurt      

  • 2 tbsp toasted shredded coconut

For the Mango Coulis:

  • 150g mango (fresh or frozen)

  • 1 tbsp lime juice 

  • 1–2 tbsp sugar 

  • 20ml water 

Method

1. Make the Mango Coulis:
In a small saucepan, combine 150g mango, lime juice, sugar, and water. Simmer over medium heat for 3–5 minutes until mango softens and breaks down. Blend until smooth, then chill.

2. Prepare Other Components:
Dice fresh mango and set aside. Lightly toast shredded coconut in a dry pan until golden (1–2 mins). Chill or whip coconut yoghurt for extra creaminess.

3. Assemble the Stack:
Warm Marcel’s Pancakes. Spoon or spread vanilla coconut yoghurt over pancakes. Top with fresh diced mango. Drizzle generously with mango coulis. Sprinkle with toasted coconut.

4. Optional Garnishes:
Fresh mint, edible flowers, or passionfruit pulp.
