

Loaded Pancake Breakfast
Everyone loves a full traditional breakfast with all the trimmings - so we’re getting in on the action! We’ve loaded up a plate of our pancakes, with sausages, mushrooms, tomato and a perfectly cooked egg to create the ultimate hearty start to your day. It’s a breakfast worth waking up for!
Ingredients
Serves 2
1 packet of Marcel’s Happy Pancakes
2 eggs
2 pork sausages
2 rashers streaky bacon
2 field mushrooms
2 vine or Roma tomatoes, halved
20ml maple syrup
Olive oil or butter (for cooking)
Salt & cracked black pepper
Optional garnish: chopped parsley or microgreens
Method
1. Slow-Roast the Tomatoes:
Preheat oven to 160°C. Place halved tomatoes cut side up on a tray, drizzle with olive oil, and season with salt and pepper. Roast for 20–25 minutes until softened and slightly caramelised.
2. Cook the Mushrooms:
In a pan, sauté whole field mushrooms in olive oil or butter for 5–7 minutes per side until golden and tender. Season well.
3. Cook the Meats:
Grill or pan-fry sausages until fully cooked, then slice if desired. Fry bacon until crispy. In the same pan, fry eggs sunny side up (or to preference).
4. Warm the Pancakes:
Heat Marcel’s pancakes according to packet instructions (toaster, microwave, or pan).
5. Assemble the Plate:
Stack two pancakes per plate. Layer with sausage slices, field mushroom, slow-roasted tomato, and crispy bacon. Top with the fried egg. Drizzle with warm maple syrup for that signature sweet-savoury finish. Garnish with fresh herbs or microgreens if desired.
