Heart Beet Kraut & Cream Cheese on Blini
Not only does the bright beet-red colour look fabulous on a plate, these delicious bite-sized blini are the perfect combination of tangy, smooth and creamy, and will keep your guests coming back for more.
Ingredients
Serves 25 blini
200g cream cheese
2 tablespoons milk
¼ cup pumpkin seeds
1 teaspoon tamari (or light soy sauce)
1 x jar Living Goodness Heart Beet Kraut
1 x packet Marcel’s Fancy Blini
Finely chopped chives to serve
Method
Put the cream cheese and milk into a little food processor or into the vessel that comes with your stick blender and blend until smooth. Put the pumpkin seeds into a heavy-bottomed frying pan and over a medium-high heat toast until golden brown and crunchy. This will take around 5 minutes. Pour the tamari over the seeds and stir well.
Arrange 25 blini on a large plate or platter, top each one with a teaspoonful of the cream cheese, followed by another teaspoonful of the heart beet kraut. Top with a sprinkling of pumpkin seeds followed by some chives and serve.
