Chicken, Date, Red Onion & Coriander Blini
Our blinis make party food easy without compromising on taste and quality. In this recipe we combine chicken with red onion, coriander, crunchy almonds and sweet dates, creating lovely little bites of deliciousness that are so tasty they’ll have your guests asking for the recipe! If you can’t find micro greens to garnish your blini then roughly chop some parsley and scatter this over the blini instead.
Makes 50 blini
225g cooked, shredded, chicken
Knob of butter
75g almonds, chopped
1 teaspoon sumac
4 tablespoons finely chopped red onion
2 teaspoons red wine vinegar
3 Medjool dates, finely chopped (or use 6 regular dates)
½ cup coriander, roughly chopped
2 lemons, zest & juice
½ cup sour cream
1 x packet Marcel’s Fancy Blinis
Micro greens, to serve
Chop the chicken and put into a bowl. Melt the butter in a heavy-bottomed frying pan over a medium-high heat and toast the almonds until golden brown. Sprinkle over the sumac and season with a pinch of sea salt. Mix well and set aside to cool.
Put the onion into a little bowl, pour over the vinegar and mix well. Put the dates and coriander into the bowl along with the chicken. Zest the lemon into the bowl and add 2 tablespoons of the juice. Add in the sour cream, the onion and the almonds, season with sea salt and freshly ground black pepper and mix well to combine.
