Double Choc & Black Forest Pancakes
This recipe idea was submitted by one of our Marcel’s fans via social media and we love it! Using our moreish Double Choc Pancakes, along with other New Zealand favourites, this is bound to be the best Kiwiana dessert you will ever have.
Ingredients
Serves 2
3/4 cup frozen mixed berries
1 tablespoon sugar
75g Whittaker’s Creamy Milk chocolate
4 tablespoons cream or milk
1 x packet Marcel’s Double Choc Pancakes
Pic’s Peanut & Whittaker’s Chocolate Butter
Motueka Creamy Belgian Chocolate ice cream
Motueka Creamy White Chocolate & Raspberry ice cream
Raspberries to decorate, optional
Method
Put the mixed berries into a pot along with the sugar and 1 tablespoon of water. Bring to the boil then reduce the heat and simmer for 5 minutes, mashing the larger berries with a fork, until syrupy.
Put the chocolate and the cream/milk into a bowl set over a pot of water (making sure the bottom of the bowl isn’t touching the water). Slowly bring to the boil, stirring as it begins to melt, until all the chocolate has melted and a sauce has formed. Leave the bowl sitting over the pot and remove this from the heat and set aside.
Arrange two plates and put a double chocolate pancake onto each. Spread a layer of the chocolate butter onto each pancake and then spread over a tablespoon of the berries. Put a scoop of the chocolate ice-cream on top of the chocolate butter and spread to the edges of the pancake. Add on another pancake and spread that too with the chocolate butter and another tablespoon of the berries. Top this with the raspberry and white chocolate ice-cream. Again, spread this to the edges of the pancake. Top with the final pancake and add on a scoop of either flavour ice-cream. Drizzle with the chocolate sauce and any extra berries, then serve.
