

Biscoff & Coffee Pancakes
Who doesn't like biscoff?! This paired with coffee is a perfect match and could be made for brunch or dessert.
Ingredients
Serves 2
1 packet of Marcels Happy Pancakes
120g Biscoff spread (smooth)
30ml instant coffee syrup
30ml cream (or milk for lighter option)
10g brown sugar (optional)
Pinch of salt
1–2 tsp coffee liqueur like Kahlúa or Tia Maria (optional)
Method
In a small saucepan over low heat, combine Biscoff spread, cream, and instant coffee syrup. Stir continuously until smooth and silky (2–3 minutes).
You can adjust the flavour by:
o Adding brown sugar if a sweeter sauce is desired.
o Stir in a pinch of salt to balance the sweetness.
o Add coffee liqueur for a deeper, more indulgent flavour.
To service drizzle over hot pancakes. Optional garnishes: crushed Biscoff biscuits, whipped cream, shaved chocolate or a dusting of cinnamon.
