Crepe Quiche Cups

Create a simple, savoury bundle of goodness for breakfasts or snacks on the go.

Ingredients

Makes 16 crepe cups:

  • 2 x packs of Marcel's Oh La La Gluten Free Crepes

  • 1/4 cup chopped onion

  • 4 large eggs

  • 1/2 cup of milk

  • 1/2 cup mayonnaise

  • 2 cups shredded cheddar cheese

  • 400g bacon (optional)

  • 250 g roughly chopped spinach

  • 100 g roughly chopped sundried tomato

Method

Pre-heat oven to 180 degrees. Whisk eggs in a bowl and add cheese, chopped spinach , chopped sun-dried tomato, mayonnaise milk and set aside. Chop bacon (if using) and onion and add to a large frying pan until cooked. Mix cooked bacon and onion into the bowl of egg mixture.

Following pack instructions, gently warm Marcel's Gluten Free Crepes in microwave or on frying pan until warm (this allows the crepes to be more malleable). Grease muffin tins before lining with the crepes.

Fill each cup to two-thirds. Bake at 180 degree for 15 mins, cover with foil, then bake for another 10-15mins or until a knife is inserted and comes out clean.
