Boysenberry lemon and ricotta (or yoghurt)

It doesn’t get a lot better than fresh fruit, maple syrup and pancakes. Add a bit of ricotta or yoghurt for a creamy hit to complement the fruit. Delish!


  • 1 packet of Marcel’s Happy Pancakes

  • Fresh, frozen (thawed) or canned (drained) boysenberries

  • Juice and zest of a lemon

  • Slosh of maple syrup

  • Ricotta cheese or Greek yoghurt


You can either mix boysenberries, lemon juice and zest, and maple syrup in a small bowl first, and then spoon onto pancakes along with the ricotta cheese or yoghurt.

Or, spoon some ricotta or yoghurt onto the pancake, followed by boysenberries, a squeeze of lemon juice, a drizzle of maple syrup and a sprinkling of lemon zest.

Either way, the combination of boysenberries with lemon and maple syrup is a TASTE
